외식으로 제공되는 한식의 1 인 1 회 제공량 및 음식잔반량 조사 연구 (Survey on the Serving Size and Waste Rate of Frequently Consumed Dishes in Korean Style Restaurants)

  • This survey was conducted to find out one serving size and waste rate of frequently consumed dishes in 37 Korean style restaurants. The range of one serving size and waste rate of Pab(boiled rice) were 180-290g and 0-21%, respectively. The mean intakes of Pab were varied according to the kind of dishes served. The waste rate of Yukgaejang(Hot meat soup) is low among Tangban(meat soups). The waste rate of Jeongol(stew with various foods) was higher than other menu items. The average one serving size per person of Pulgogi(grilled meat with sauce), Galbi gui(grilled beef ribs with sauce), Deongsim gui(grilled meat) were 270g, 360g, and 210g, respectively. The average waste rate of side dishes were varied according to dist served. The dish which has higher waste rate than other dishes were Samgaetang(boiled chicken with ginseng), Bokmaeuntang(stew with puffer), Naengmyeun(cold noodle), Pulgogi(grilled meat with sauce), Galbi gui(grilled beef ribs). The reasonable one serving size of dishes based on this survey results was suggested for serving in restaurants.

남은 음식물을 첨가한 펠렛사료가 오리의 생산성 및 육질에 미치는 영향

  • 남은 음식물을 수분 ·탈취 ·건조하여 0%, 25%, 50% 및 75% 대체한 펠렛사료를 육성오리에 5주 동안 급여한 결과 시험종료 체중이 남은 음식물 25%와 50% 첨가에서 유의적인(p<0.05) 증가를 나타냈다. 일당증체량은 남은 음식물 25%가 다른 처리구보다 유의적(p<0.05)으로 증가함을 나타낸 반면에 75%은 유의적인(p<0.05) 감소함을 나타냈다. 사료섭취량은 남은 음식물을 첨가함에 따라 다소 증가하였으나 유의적인 차이는 없었다. 사료효율은 남은 음식물 25%가 가장 좋은 반면에 75%가 가장 나쁘게 나타났다. 도체중은 75%구가 유의적(P<0.05)으로 감소하였다. 수분함량은 남은 음식물 25%와 50%구는 대조구와 별다른 차이가 없었으나 75%구가 유의적(P<0.05)으로 높았다. 지방과 단백질함량은 남은 음식물의 대체수준의 증가에 따라 유의적(P<0.05)으로 감소함을 나타냈다. 육의 pH은 남은 음식물 대체수준의 증가에 따라 증가하는 경향이였으며, 75%구에서 유의적인 차이를 나타냈다. 육색의 명도와 적색도는 남은 음식물의 대체수준의 증가에 따라 감소하는 경향이였다. 콜레스테롤 함량은 남은 음식물 25%, 50% 및 70%구에 유의적(P<0.05)으로 감소하였다. 관능평가에서는 냄새와 외판이 남은 음식물 대체 급여에 의해 약간 떨어지는 경향이였으나 맛에 있어서는 다소 증가하는 경향을 나타냈다. 따라서 남은 음식물을 이용한 토리 펠렛사료에 있어 50% 까지 대체 이용 가능성을 시사해주고 있다.

Meat Value Chain Losses in Iran

  • To stop hunger, reducing food losses is a potential movement towards saving food. A large portion of these losses could be avoided and reduced through the improved food chain in many countries. Raising awareness on how and where food losses occur will help recovering foods such as meat by identifying solutions and convincing people to implement those solutions. This, in turn, will lead to private and public efforts to recover meat that might be otherwise wasted. After highlighting the importance of food saving benefits and relevant statistics, this paper explains the possible ways to reduce meat loss and waste in abattoirs and presents a framework for prevention according to the estimates of meat losses in Iran meat supply. The current article answers the questions of where do we have the meat loss in Iran and what approaches are most successful in reducing losses in the meat industry. The national average loss and waste in meat production are about 300,000 metric tonnes (about 15%). Many segments and players are involved with this huge amount of losses in the meat value chain, a large portion of these losses could be avoided and reduced by about 25% through using by-products with the mechanization of design and manufacturing. The production amount of mechanically deboned meat (MDM) is 105,091,000 kg, concluding the major waste (88.33%) of total poultry losses. Ensuring appropriate actions by exploiting the full potential of engaged Iranian associations and institutes is considered to reduce the losses.

한식식당의 일부 판매음식의 1인 섭취량 및 잔반률 조사 (Survey of Food Intake Amount and Waste Rate per Person on Korean Style Restaurants)

  • A survey of food intake and waste rate on 60 Korean style restaurants in Seoul. The results were summarized as follows: 1. The total served weight of Pibimbab(mixed rice) was 475.66 g per person, waste rate was 6.0%, frequent side dishes were bae-chu kimchi, kak-du-gi, suk-ju-namul by the order. 2. Han- jeong-sik(Korean style full course food) were served with many kinds and varied numbers of side dishes, and waste rate of those were higher than other menu items. 3. The average serving size of Naeng-myeun(Cold noodle) was 641.00 g, and the waste rate was 11.1%. The waste rate of side dishes was about zero. 4. Man-du kuk(dumpling soup) was served 695.34 g. Most of side dishes served has high waste rate which is more than 50%, average. 5. Seol-nong tang(meat soup) was served 755.70 g, side dishes of that were simple such as kak-du-ki or paek kimchi. The average waste rate of side dishes was about 40%. Yuk-gae-jang(Hot meat soup) was 494.83 g a person, waste rate of that were 24.1%, and minimum and maximum waste rate of side dishes were 3.3, 100%, respectively. 6. Kimchi chigae(Kimchi stew) and Doen-jang chigae(fermented soy stew) were served with varied number of side dishes. 7. Deong-sim gui(grilled meat) and Pulgogi(grilled meat with sauce) were served 196.83 g and 308.98 g. The average waste rate of those were 0.7% and 5.8%, respectively. But waste rate of side dishes was 33%. We would like to decrease waste rate by proposing recommended items and weight of some food for ${\ulcorner}Good{\;}Menu{\lrcorner}$.

Towards water-efficient food systems: assessing the impact of dietary change and food waste reduction on water footprint in Korea

  • Globally, agriculture is one of the largest consumers and polluters of water resources, contributing to the unsustainable use of limited water resources. To reduce the resource use and environmental footprints associated with current and future food systems, researchers and policy makers have recommended the transition to sustainable and healthier diets and the reduction of food loss and waste along the food supply chain. However, there is limited information on the synergistic effects and trade-offs of adopting the two measures. In this study, we assessed the water-saving potential of the two measures in South Korea using environmentally extended input-output relying on the EXIOBASE database for the reference year 2020, along with scenario analysis to model the potential outcomes. Specifically, we analyzed scenarios where meat consumption was reduced by 30% and 50% and in combination with a 50% reduction in food waste at the consumption stage for each scenario. According to our findings, by considering individual measures of dietary change and food waste reduction, shifting to a diet with 30% and 50% less meat consumption could lead to reduction in water footprint by 6.9% and 7.5%, respectively, while 50% reduction in food waste at the consumption stage could save about 14% of water footprint. However, the synergistic effects of the two measures such as 30% less meat consumption and 50% food waste reduction, and 50% less meat consumption and 50% food waste reduction result to 20% and 24% reductions in water footprint, respectively. Moreover, our findings also showed that increasing food consumption with high environmental impacts could promote resources use inefficiency when waste occurs. Thus, policy strategies that address synergistic effects of both dietary change and food waste reduction should be strengthened to achieve sustainable food system. International and national policies can increase resource efficiency by utilizing all available reduction potentials while considering strategies interactions.

MS 발효 잔반사료가 청둥오리의 육질에 미치는 영향 (Meat Quality of Mallard by Feeding of MS-Fermented Food Waste)

  • 본 연구는 대조구로서 일반배합사료에서 사육된 청둥오리와 처리구로서 일반배합사료에 MS 발효 잔반사료를 20% 또는 50%를 혼합하여 일정기간 사육한 후 사육효과를 알아보았고 이화학적 분석 및 아미노산과 지방산 분석 등을 통해 처리구에 따른 육질을 비교함으로서 MS 발효 잔반사료의 오리사료로서의 효율성을 검토하였다. 사육효과에 대한 결과로서 도체율 및 각 장기무게는 대조구와 처리구간에 유의적 차이가 발생되지 않았으나, 사료효율에 있어서는 처리구보다 대조구에서 좋은 결과를 보여주었다 (P<0.05). 이화학적 분석으로서 보수성과 pH는 모든 처리구간에 있어서 유의차가 없었다. 그러나 육색에 대한 결과를 보면 명도($L{\ast}$)는 대조구가 20% 또는 50% MS 처리구보다 높은 값을 나타냈고 (P<0.05), 적색도($a{\ast}$)에서는 각 처리구가 대조구보다 더 높게 나타났다 (p<0.05). 관능평가로서 냄새와 기호성에서 있어서는 각 처리구간 유의적 차이가 없었다 (p>0.05). 한편 각 처리구의 부위별 아미노산 분석에 있어서 다리고기의 경우는 20% MS 처리구가 가장 많은 함량을 가지는 것으로 분석되었고, 가슴고기에 있어서는 대조구가 20% 또는 50% MS 처리구보다 더 높게 나타났다. 지방산 분석에 있어서 각 처리구별 불포화지방산 함량은 대조구보다 MS 발효 잔반사료 처리구에 더 많은 함량이 함유된 것으로 분석되었다. 이와같은 결과를 종합해 볼 때 청둥오리 사육에 있어서 시판 배합사료에 50% 수준까지 MS 발효 배합사료를 혼합급여하여도 성장 및 육질에 큰 영향을 주지 않음을 알 수 있었다. 비록 사료효율 측면에서 시판 배합사료에 비해 MS 발효 잔반사료 처리구가 더 낮게 나타났으나, 음식물쓰레기로 인한 경제적 및 환경적 손실을 감안할 때 본 연구결과가 주는 의미는 크다고 여겨진다.

Potential of combining natural-derived antioxidants for improving broiler meat shelf-life - A review

  • Synthetic antioxidants have shown adverse effects on consumers. The review, thus, aims to assess the effect of marinating broiler meat with plant leaves-derived antioxidants potential for improving shelf-life and human health. Broiler meat loss and waste due to spoilage is more than three million kg annually, thus, extending shelf-life by reducing initial microbial load and autoxidation is essential. Adding various antioxidants would reduce oxidation of protein and fatty acids improving nutritional shelf-life through synergic interactions. Antioxidant synergetic effects also improves reduction in microbiota proliferation leading to the delayed development of off flavours and deterioration of meat colour. To reduce initial microbial load and autoxidation effects, the inclusion of polyphenols and antioxidants from varying sources by mixing various antioxidants would lead to improved synergic effects.

충남 일부 지역 초등학생의 학교 급식 잔반 실태 조사에 대한 연구 (Study on Levels of Plate Waste by Elementary School Students in Chungnam Province)

  • The purpose of this study was to examine the dietary attitudes, dish preferences, and plate waste status of elementary school students in Chungnam province. Questionnaires fearuring dietary attitudes, dish preferences, and plate waste measurements over 4 days were administered to 278 elementary school students (3~6th grades; boys 124, girls 154). Regarding plate waste of food, subjects showed the following in decreasing order: soup > vegetable > fish > kimchi > rice > meat. Regarding food preference, cooked rice showed the highest preference among rice dishes, whereas both boys and girls preferred stir-fried rice among one-dish meals. For soup, soup cooked with mear was highly preferred. However, soup with vegetables was preferred less. For meat, soy sauce-glazed chicken and bulgogi were the most preferred boys and girls. In addition, boys indicated a higher preference for most of the meat dishes than girls. Among the many types of kimchi, Chinese cabbage kimchi (Baechu Kimchi) was the most preferred. For the school meals, the served and consumed amounts by boys were higher than those of girls. However, there was no significant difference in plate waste between the boys and girls. To improve management of school meals, dietitians should understand factors that influence students' food preferences.

Accounting for the Water Footprint Impact of Food Waste within Korean Households

  • Globally, the demand for food and water resources are increasing rapidly with the growing concerns of meeting the projected population upsurge, specifically by 2050. The global population is projected to hit 9.8 billion in 2050 while the food demand is expected to increase by 77% from the 2007 base year. Moreover, the already scarce water resources, especially in the food-producing regions, expected to be significantly affected as food production already accounts for over 70% of the global water resources. However, the estimated food demand encapsulated the actual demand for both human consumption and animal feed in addition to the exuberant food waste at the consumption stage of the supply chain, notably in the developed countries. Managing the food consumption demand and food waste can have across-the-board benefits on water resources and other associated food production impacts. This study assessed the water-saving potentials through food waste in Korean households using the food waste data obtained from the direct weighing analysis. The household food waste collection and characterization were carried out during the summer (July), fall (September), and winter (December) seasons of 2019. The water footprint related to the food waste within Korean households was based on the water footprint concept, i.e. indirect water use. The results of our estimation showed that an average Korean household wasted 6.15 ± 4.36 kg daily, amounting to 12.53 ± 11.10 m3 of water resources associated with the waste. On the per capita basis, an average of 0.024 ± 0.017 kg/capita/day of food was wasted resulting to 0.049 ± 0.044 m3/capital/day of water resources wasted. The food waste types that accounted for the principal share in the water footprint were beef, soybean, rice and pork with values 30.7, 10.1, 9.6, and 7.5%, respectively. Considering that the production of meat and meat products are water intensive and the agricultural water use in Korea is largely for rice production, addressing the food waste of these two important agricultural products can be a hotspot for water saving potential in the country. This study therefore provides an insight to addressing the water scarcity in the country through reducing household food waste.

Use of Tannery Wastes in the Diet of Broiler

  • Tannery waste contained 90.93% DM, 77.02% CP, 0.77% CF, 2.83% EE, 7.19% ash and 3,450 kcal ME/kg DM. A total of 144 day-old broiler chicks were divided into three dietary groups; $D_1$ (Containing 10% protein concentrate-PC), $D_2$ (Containing 5% PC+5% tannery waste-TW) and $D_3$ (Containing 10% TW) having 3 replicates of 16 chicks in each. The birds were fed broiler starter diet containing 22% CP, 3,000 kcal ME/kg and broiler finisher diet containing 21% CP, 3,100 kcal ME/kg up to 42 days of age, and meat yield traits were measured from the representative birds from each replication to asses the feasibility of using tannery waste in the diet of broiler. Feed intake, live weight, feed conversion efficiency and livability did not differ between diets (p>0.05) but the cost of production and profitability differed significantly (p<0.001). Profitability of D1, D2, and D3 diets were 2.98, 9.90 and 14.04 Taka/kg respectively. Diets did not affect on meat yield traits (p>0.05), except gizzard, shank and feather weight (p<0.01). Gizzard and shank weigh were improved with increasing level of tannery wastes in the diet, hence tannery waste can be used without any harmful effect in the broiler diet.
