상백피 첨가에 따른 숙육의 연화와 관능적 특성 (Sensory Characteristics and Tenderness of Boiled Beef by Addition of the Barks(Morus alba Linne))

  • Tenderization of beef by the addition of barks(Morus alba Linne) and its sensory properties were observed by shearing test, cooking loss, pH, protein content and sensory evaluation. Shear force was decreased as the addition level of barks (Morus alba Linne) increased. Tenderization effect of beef was increased 8,8% at the addition level of 2.5%, 25% at 5.0%, 4.7% at 7.5%, 58% at 10% barks(Morus alba Linne). Cooking loss was observed 44.50% at the no addition, 45.3% at 2.5%, 45.8% at 5.0%, 47.5% at 7.5%, 50.0% at 10% addition level of barks (Morus alba Linne). As the addition level of barks(Morus alba Linne) increased pH of cooked beef decreased to the range of 5.6 to 5.46. As the addition level of barks (Morus alba Linne) increaed protein content of beef decreased whereas protein content of cooled liquor increased. The addition of barks(Morus alba Linne) improved the sensory quality of cooked beef. Especially, tenderness scored the highest value in 10% added beef and other quality factors color, flavor, juiciness and overall quality were evaluated significantly high in 5% added beef. Therefore 5% addition level of barks(Morus alba Linne) for cooking beef was suggested as the desirable level of addition.

뽕잎(Morus alba L.)의 물과 80% Ethanol 추출물의 Angiotensin Converting Enzyme과 Xanthine Oxidase에 대한 활성억제효과 탐색 (Inhibitory Effects of Water and 80% Ethanol extracts from Mulberry Leaves (Morus alba L.) on Angiotensin Converting Enzyme and Xanthine Oxidase)

  • 생리활성을 갖는 새로운 기능성 물질을 개발할 목적으로 108종의 뽕잎을 이용하여 물과 80% 에탄올 추출물을 제조하고 이들의 Angiotensin converting enzyme(ACE) 활성억제효과 및 XOase(xanthine oxidase) 활성억제효과를 탐색하여 본 결과, 페놀함량이 물 추출물에서는 각자용산, 대정선 등 10종이, 80% 에탄올 추출물에서는 와룡, 하수상 등 23종이 15 mg/g 이상의 총 페놀함량을 나타내었으며, Angiotensin converting enzyme (ACE) 활성억제효과는 야마나까다까스께, 미지로 등 10종이 물 추출물 및 80% 에탄올 추출물에서 동시에 100%의 활성억제효과를 나타내었으며, 그 외 청일뽕 등 34종은 물 추출물에서, 원주고조 등 34종은 80% 에탄올 추출물에서 90% 이상의 활성억제효과를 나타내었다. 또한 XOase(xanthine oxidase) 활성억제효과는 물 추출물에서 청십조생, 수원상3호 등 5종이, 80% 에탄올 추출물에서 적목이 50% 이상의 활성억제효과를 나타내었으며, 그 외 수원뽕 등 27종은 물 추출물에서, 홍올뽕 등 21종은 80% 에탄올 추출물에서 약간씩의 효과를 나타내었다. 이상의 결과, g당 페놀함량이 적은 뽕잎이지만 높은 생리활성기능을 나타내는 여러 종의 뽕잎 물과 80% 에탄올 추출물들은 항고혈압 및 항관절염의 효과가 있는 기능성 식품소재로 활용할 수 있을 것으로 판단되었다.

심재, 변재, 형성층 및 사부를 포함한 뽕나무 심부 고온추출물의 항염증 활성 (Anti-Inflammatory Activity of High Temperature Extract from the Central Part Including Heartwood, Sapwood, Cambiun, and Phloem in Morus alba L.)

  • Background: Inflammation plays an important role in various diseases, including ulcerative colitis, Behcet's disease, and rheumatoid arthritis. In this study, we investigated the anti-inflammatory effects of Morus alba L. extracts obtained using different extraction methods (water extraction or high temperature extraction) on RAW264.7 cells. Methods and Results: Extracts from the central part (including the heartwood, sapwood, cambiun, and phloem) and bark (including the periderm and cortex) of Morus alba L. were obtained using either water or high temperature extraction. The following extract were obtained: MA1, water extract from the central part of Morus alba L., MA2, high temperature extract from the central part of Morus alba L., MA3, water extract from the bark of Morus alba L., and MA4, high temperature extract from the bark of Morus alba L. None of these extracts was observed to be cytotoxic to RAW264.7 cells. The MA2 extract reduced the production of LPS-induced NO (nitric oxide), $PGE_2$ (prostaglandin $E_2$), $TNF-{\alpha}$, IL-6, and $IL-1{\beta}$ production in LPS-stimulated RAW264.7 cells. Conclusions: These results indicated that the inflammatory response was moderated by MA2. Treatment with MA2 could be used as a natural medicine for treating diseases involving inflammation. However, further experiments are required to determine how the high temperature extraction method alters the active ingredients in the extract and influences the anti-inflammatory effects of Morus alba L..

오디 분말을 이용한 견직물의 염색성 (Dyeing Properties of Morus alba L. Fruit Powder on the Silk Fabric)

  • The main colorant of Morus alba L. fruit is anthocyanin which is a kind of flavonoid group. In this article, the dyeing properties of colorant extracted from Morus alba L. fruit were investigated on some silk fabrics. The results were as follows: The maximum absorbance of Morus alba L. fruit showed at 284 nm, and 516 nm by UV-VIS spectrophotometer. The dye adsorption increased according as dye concentration. The optimal dyeing temperature was $60^{\circ}C$ and the dye equilibrium was reached 40 minutes after dyeing. The highest K/S value of the colorant obtained at bath ratio 40:1. The effect of pH of dye solution showed higher K/S value at acidic than alkaline condition. Almost Mordants except pre-Fe and Sn did not significantly increased dye adsorption. The pre mordanted silk fabrics showed RP, P, and post mordanted ones showed PB, GY. The color fastnesses to light, washing, and perspiration were modified at pre-Sn mordanted samples.

C57BL/6 mouse에서 뽕나무 추출물의 모발성장효과 (Effect of Morus alba extract for hair growth promotion in C57BL/6 mouse)

  • Morus alba has been well known for its tonic effect or preventing of hypertension, aging, or diabetes mellitus in Asian countries. To evaluate the its effect on hair growth promotion, we performed the hair regrowth experiment with leaf, branch, root and fruit extract of Morus alba on animal model of C57BL/6 mouse. The hair regrowth effect was remarkable in the mouse treated branch and root extract (with what %), however, little effect on hair regrowth appeared on the mouse treated with leaf extract. Morus alba extract displayed antibacterial effects on Bacillus subtilis, Staphylococcus aureus, Pseudomonas and Candida albicans. These results indicated that branch and root extract of Morus alba could be applicable for hair regrowth or prevention of hair loss in human.

상심자의 모노아민산화효소 저해활성 (The Inhibitory Activity on Monoamine Oxidase of the Fruit of Morus alba)

  • We examined the inhibitory activities against monoamine oxidase (MAO) of Morus alba in vitro and in vivo methods. Methanolic extract of M. alba showed significantly inhibitory activities on MAO-A and MAO-B that were prepared from rat brain and liver in vitro. The inhibitory activities were measured by serotonin and benzylamine as substrates, respectively. MAO-A and MAO-B activities were potently inhibited by ethylacetate extracts of M. alba in vitro tests. Those activities in vivo tests have different tendency each other. MAO-A activity was increased by the oral administration of methanolic extract of M. Alba, while, MAO-B activity was decreased. Consequently, we can suggest that M. alba may have the effects on the inhibitory activities against MAO both in vitro and in vivo.

상백피 추출물의 향균력 및 최적추출조건 검토 (Investigation of Optimum Extracting Condition and Antimicrobial Activity of the Extract from the Root Bark of Morus alba)

  • In order to develop a natural food preservative, the root bark of Morus alba was extracted with several solvents, and then antimicrobial activity was investigated. The optimum extracting condition for the antimicrobial substance from the sample, minimum inhibitory concentration (MIC) of the extracted substance against microorganisms were also examined. The antimicrobial activity of the ethanol extract form the sample was stronger than those of the extracts by the other solvents such as water, methanol. ethyl acetate and acetone. The optimum extracting condition for antimicrobial substance from the sample was shaking extraction twice for 5 hours at room temperature in case of 7 times of absolute ethanol added to the crushed root bark of Morus alba. The ethanol extract from the root bark of Morus alba had strong B. cereus, L. monocytogenes and S. aureus. Especially, Bacillus species was the most susceptible to the extracted substance. The ethanol extract showed antimicrobial activity against Gram negative bacteria(MIC, 160~1600 ug/ml) and yeasts(MIC, 1600 ug/ml) such as C. albicans and S. acidifaeciens. The extract also showed growth inhibition against molds such as A. niger, A. parasiticus, A versicolar and T. viride.

뽕나무의 품종과 부위에 따른 Resveratrol 및 Oxyresveratrol의 함량비교 (Comparison of Resveratrol and Oxyresveratrol Contents Among Varietes of Morus alba L.)

  • 국내에서 재배되고 있는 뽕나무의 resveratrol 및 oxyresveratrol 함유량을 측정한 결과 부위로는 뿌리껍질, 품종으로는 신일 및 수원품종이 가장 많은 resveratrol 및 oxyresveratrol를 함유하는 것으로 나타났다. 따라서 뽕나무로부터 resveratrol 및 oxyresveratrol을 유효성분으로 얻고자 할 때는 신일 및 수원품종의 근피를 사용하는 것이 가장 효과적일 것으로 판단된다.

  • Morus alba fruit contains several anthocyanins and flavonoids like cyanidin-3-O-rutinoside and quercetin-3-O-rutinoside. Extractions from Morus alba fruit were performed with five different compositions of ethanol/water [v/v]. High-Performance Liquid Chromatography (HPLC) was used for the validation and content determination of cyanidin-3-O-rutinoside and quercetin-3-O-rutinoside. The contents of cyanidin-3-O-rutinoside in ethanol extracts (100%, 70%, 40%, 20% and 0%, ethanol/water [v/v]) were 1.150%, 0.822%, 0.749%, 0.663% and 0.597%, respectively. Quercetin-3-O-rutinoside contents of ethanol extracts (100%, 70%, 40%, 20% and 0%, ethanol/water [v/v]) were 0.167%, 0.161%, 0.159%, 0.155% and 0.096%, respectively. The highest contents of cyanidin-3-O-rutinoside and quercetin-3-O-rutinoside were in the ethanol extract with 100% ethanol/water [v/v]. These HPLC analysis method could be used as basic data for standardization of functional food from Morus alba fruit.

상백피 추출물로부터 향균성 물질의 분리정제 (Purification of Antimicrobial Substance for the Extract from the Root Bark of Morus alba)

  • The ethanol extract from the root bark of Morus alba showed the strongest antimicrobial activity on the growth of almost all the tested microorganisms which were food-borne pathogens and food-related microorganisms. 1) In order to isolate and purify of antimicrobial substance extracted from the root bark of Morus alba, the antimicrobial substance from the ethanol extract which exhibited a strong antimicrobial activity was purified by solvent fractionation, silica gel column chromatography, TLC and HPLC. Among the fractions fractionated by 4 kind of solvents from the ethanol extract, the antimicrobial activity of ethyl acetate fraction had the strongest antimicrobial activity against B. subtilis. Unknown compound were isolated from the ethyl acetate fraction by silica gel column chromatography, TLC and HPLC and the compounds showed strong absorbance at 207, 217 and 285 nm, therefore, it was supposed to be a kinds of aromatic compound.
